Quark (Kwark)

Quark is a type of soured milk simiar to cottage cheese or curd cheese, used in a dutch Kwarktaar recipe. 1l of milk will make 100-200ml of kwark.

Ingredients

  • 1 l Whole milk
  • 3 tblsp Sour cream

Instructions

  1. Heat milk to 80C, leave to simmer for 30min
  2. Cool to 20C, and add the sour cream.
  3. Leave at 20C, covered until the next day.
  4. Using a siv or cheese cloth, add soured milk and squeeze, the more you squeeze the dryer it gets.
