Ingredients
200.0ml   double cream, 2.0tbsp   icing sugar, 100.0g   dark chocolate,    cocoa power,to dust

Directions:

o	Whip the cream and sugar in a large bowl to form soft peaks
o	Place the chocolate into a bowl, sat over a pan of simmering water and allow to melt.
o	Stir the melted chocolate into the cream, until combined.
o	Place in the fridge to chill for up to 20 min (or longer if time allows)
o	To serve, quenelle the mousse between two spoons and place on a serving plate.
o	Serve with starfruit and orange slice alongside, dust with cocoa and garnish with a sprig of mint.
