o | Chop the meat into chunks and place in a bowl. Chop the shallots and place half to one side. Chop the chillies, ginger, langkuas and garlic and grind these together with half the shallot and 50 ml of thin coconut milk. | ||
o | Pour this paste over the meat and stir to ensure an even coating. Set aside for 30 minutes . T | ||
o | Then, heat the oil in a large frying pan and saute the remaining shallot until it softens. Add the meat and the marinade and season with coriander, cumin, salt and freshly ground black pepper. | ||
o | Pour in the remaining thin coconut milk and bring to the boil, stirring continuously, then lower heat and allow to siearner until the meat's tender. Finally, add the thick coconut milk and continue to cook, over a medium heat, until the liquid has been almost completely reduced. |
