Quark is a type of soured milk simiar to cottage cheese or curd cheese, used in a dutch Kwarktaar recipe. 1l of milk will make 100-200ml of kwark.
- 1 l Whole milk
- 3 tblsp Sour cream
Heat milk to 80C, leave to simmer for 30min
Cool to 20C, and add the sour cream.
Leave at 20C, covered until the next day.
Using a siv or cheese cloth, add soured milk and squeeze, the more you squeeze the dryer it gets.
